Start Your Day With (Healthy!) Blueberry Pancakes

These are a perfect way to start every day and they are great even before digitals or a swimwear/lingerie shoot, as they don't cause ANY bloating. Hooray!!

So you have a big day ahead but you don’t want to eat a big meal because you want to avoid being bloated. So what should you eat for breakfast?
Well if you’re looking for a plant based meal that is easy to make, that will keep you full for longer, give you energy and not upset your stomach, then try these pancakes. Yes, pancakes!
They work because of the combination of protein and fibre. Protein is more satiating than carbohydrates and fat and when consumed in its whole food form you’ll get the benefits of the other nutrients in the food too. Fibre will also keep the hunger away and help with your digestion, so it’s a perfect combo.
This recipe is low in FODMAPs (Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols) because high FODMAP foods can cause bloating, gas and digestion issues in a lot of people as they can be poorly absorbed in the intestines and begin to ferment and I know you don’t want that if you have a long day of shooting ahead!
So these nutrient dense, satiating and easily digestible pancakes could be just the thing you are looking for.
1 large ripe banana 1/2 cup blueberries 2 tablespoons buckwheat flour 1/4 cup teff flour 1/2 cup almond milk 1 tablespoon chia seeds 1 teaspoon maple syrup 1/4 teaspoon apple cider vinegar 1/4 teaspoon baking soda
- Mash the banana and blueberries in a bowl with a fork
- Add the other ingredients and mix with a spoon
- Heat a non-stick pan on low to medium heat
- Spoon a tablespoon amount into the pan and spread it out with the back of the spoon until it is about the size of your palm (depending on the size of your pan you might fit 2-4 in one batch)
- Once it starts to bubble a little, or slightly cooked through, flip and cook until brown on the other side
The recipe takes about 20 minutes, makes about 10 small pancakes, is easy to make the night before (just store in the fridge and heat them up in the morning) and works well topped with more berries, maple syrup or just eat them as they are on the run.
